Update profile and resume

Summary

• Refresh the site copy to describe AI-assisted engineering workflows and git-worktree-based development practices.
• Update the primary GitHub profile link from sofired to scottescue.
• Replace and rename the published resume, updating header, hero, and README references.

Why

The portfolio and resume now reflect the current engineering profile, workflow emphasis, and public GitHub identity. The explicit download filename also gives visitors a descriptive resume file name.

Impact

Visitors see updated positioning across the homepage and receive the new two-page resume from /Scott_Escue_Resume.pdf. The previous /resume.pdf asset is removed as part of the rename.
