feat: refactor and optimize T-Deck-Pro&Max E-Ink UI and touch controls

Summary

This PR wires the E-Ink touch targets and the 240x320 layout for the T-Deck Pro V1.1 and T-Deck MAX UI.

Scope

• Register touch targets for navigation, menus, messages, nodes, notifications, emotes, and the virtual keyboard.
• Keep touch target values range-checked before they reach UI actions.
• Align target rectangles with the corresponding E-Ink layout changes.

Hardware isolation

• New UI behavior is guarded by _VARIANT_T_DECK_PRO_V1_1 or T_DECK_MAX.

Dependencies

• PR 1: touch gesture and target-capture foundation.
