Change default date style to ISO 8601

ISO 8601 is the least confusing date format I think.

Before: 04-08 16:12
After: 2026-08-04 16:12

Oh my goodness, yes! I'm always confused whenever I look at the current format 💀

While I think having the year in there is overly verbose, I understand its usage.

Yeah, without the year, it may be hard to tell whether it's MM-DD or DD-MM.
