Update from code changes: consolidate node-operator docs on base/base

Summary

Point the node-operator reference pages at the consolidated base/base repository and document the new NODE_TAG pinning workflow and root docker-compose.yml knobs now that the public operator node image ships from this repo.

Changes

• run-a-base-node: switch clone target to base/base, document pulling ghcr.io/base/node by default vs. --build, add a NODE_TAG pinning subsection and a table of the new compose env vars (NODE_TAG, NETWORK_ENV, HOST_DATA_DIR, PROFILE), and note the rust-services Dockerfile target used by --build.
• snapshots: refresh the pruning-flags deep link to base/base/.env.mainnet#L34, update the "cloned directory" wording, and show both docker compose up and --build variants for restart.
• troubleshooting: update repo links and directory references from base/node to base/base.
• performance-tuning: update the "Base Node repository" link to base/base.
• azul/node-upgrade: rewrite the "Both clients are available from…" note and migration steps to reflect that the operator node is now published from base/base instead of base/node.

Context

Follows base/base#4470, which cut over the public operator node from base/node to base/base (root docker-compose.yml, new .env.mainnet / .env.sepolia templates, and the ghcr.io/base/node image built from the rust-services Dockerfile).
