Remove stale build artifacts, update workshop slides - #34

Removes Functiona_Enrichment.log/.pdf/.tex, leftover local pdf_book render artifacts from before the chapter reorg (CI only builds the bs4_book HTML format, so these were never regenerated and had gone stale). Also removes the unused Sydney_informatics_hub_logo.png (its only reference in index.Rmd is already commented out), and swaps the 2025 workshop slides deck for the 2026 pptx/pdf versions.
