Version bump and changelog for the canonical gate, the security tooling, and the chapter rewrite.
Deliberate major bump:
git-cliff --bumped-versioncomputesv6.1.0from the commit types, but following the previous chapters no longer produces the stack the reference implementations run, and the package this course documents moved from v5 to v6 in the same round.
