Use full width buttons in settings

There are so many scrolling text buttons in the custom settings that it hard to read what they are/set to

No, that doesn't change the button width not fitting the text

Ah, yeah, known problem, especially with other languages, we plan to make a redesign in the future, but as a temporary solution I added "Text scale" option in Gui VRSettings so u can customize text scale for settings as you need.
