[ios] Build version of .ipa doesn't match build version in source file

Describe the bug

altstore-source.json has version set to 1.20.1-nightly.56.1, while app artifact has version 1.20.1.56.1, so it is impossible to install it through SideStore.

So problem is that this job https://github.com/SableClient/Sable/blob/bf5ee7d4fa5153d31ba3c039ff783ab57a66b330/.github/workflows/tauri-build.yml uses different version for source file update

Oh yeah, that makes sense, ALTSTORE_VERSION is taken from CFBundleShortVersionString which always will be short version, but looks like SideStore uses another field for validation, not sure about AltStore. I think SideStore uses CFBundleVersion
